The uniquely favoured climate of Nantou County, Taiwan

Nantou County in Taiwan has a distinctive climate, with a wide day-night temperature swing and afternoons often wrapped in dense fog. In such conditions the tea grows slowly and solidly. Bathed in the cool winds from the neighbouring mountains, the leaves become tender yet substantial, containing less of the catechins that cause astringency and bitterness, and more of the amino acids that bring umami and the pectin that makes the liquor rounder and smoother.

There are two ways to roast tea leaves: charcoal roasting and electric roasting. Of the two, charcoal roasting is a time-consuming and labour-intensive traditional craft. Once the charcoal is lit, the temperature must be adjusted continuously over several days, patiently allowing the heat to penetrate evenly. Through the far-infrared effect of the charcoal fire, both leaf and stem are roasted through, off-notes are removed, and the natural sweetness of the tea is released to its fullest. The entire process is carried out by hand by experienced tea masters.

The charcoal used for roasting comes from longan wood, which gives off a mellow, sweet fragrance. Tea roasted by hand over longan charcoal has its moisture, caffeine and bitter off-notes tamed, giving way to a gentle sweetness interwoven with the distinctive sweet aroma of longan — a flavour quite unlike any other. The combination of traditional fermentation craft with longan charcoal roasting makes the tea richer and more fragrant.

Hand roasting over charcoal is inseparable from the tea master’s deep experience and consummate skill. The master must read the state of the leaves along with temperature and humidity, judge the heat and roasting time precisely, and patiently keep watch over the tea for several nights in a row. With practised skill and a deep affection for the leaf, the master draws out the very best from every leaf, producing tea of consistent, top-tier quality.

During processing, Taiwanese tea is repeatedly “cloth-rolled” (wrapped in a large cloth and rolled into a ball) and “broken up” (loosened again in a tumble dryer), gradually forming its distinctive round shape. This is why, when brewed, the leaves unfurl slowly as the hot water is poured, allowing oolong tea to be infused many times over with a lingering aftertaste.
