The aroma above the liquor works in layers: the same infusion smells different hot, warm and cool. The milk-candy note of Jin Xuan grows clearer as the temperature drops, peaking while the tea is still warm and easing away as it cools further.
Liquor: green shading to yellow with a milky cast, clean and bright
Roasted over longan charcoal, with no more than 6 kg to a basket and the roasting master keeping watch for the full 3 to 10 hours-all for one good basket of tea.
Charcoal roasting lowers the caffeine, leaving a mellower liquor that is gentler on the system.
The fragrance left in the bottom of the cup takes on the sweetness of longan charcoal, so it reads clearer, longer and more natural
